Culinary culture and table traditions of Bosnia and Herzegovina Bosniak immigrants Istanbul province example of Pendik, Kartal and Bayrampaşa districts

Cuisine culture is one of the most important components of cultural heritage reflecting the geographical characteristics of societies throughout history. Due to its geographical location, the Balkans hosted numerous empires. As a result of hosting, the cuisine culture developed and increased by diversifying through interaction with various cultures. Bosniaks, who mostly live in Bosnia and Herzegovina, were long ruled by the Ottoman Empire. They were a society that continued their lives by migrating to various parts of Türkiye. As a result of these migrations, it was unavoidable that Bosnian and Turkish cuisine cultures would interact. The study was structured as qualitative research. The homogeneous sampling method, one of the purposive sampling methods, was used to determine the sample. The study group consists of 35 Bosnian migrants from the districts of Bayrampaşa, Kartal, and Pendik. In the qualitatively designed research, data were obtained through a semi-structured interview technique. This study aims to record the knowledge accumulation of first-generation migrants, who are elderly and difficult to reach, and second-generation migrants (40-65 years old), and to pass it on to future generations. It also aimed to elaborately examine the cuisine culture of Bosnian migrants to Türkiye and reveal the interaction of Bosnian cuisine culture with Turkish cuisine. The Bosnian population is densely concentrated in the Marmara region. For this reason, the fact that such a comprehensive study has not been conducted in this region shows the significance of this study. Furthermore, it is considered that it will be a significant resource for further studies, especially due to the scarcity of studies on Bosnian cuisine culture and the fact that the region contains many different ethnic groups.
