The investigation of Escherichia coli O157:H7 serotype in some cream pastries consumed in Çanakkale (Turkey)

Abstract (EN)

This research was undertaken to investigate the precence of O157:H7 serotype of Escherichia coli in cream pastries offered to consumption in bakeries, patisseries and supermarkets in Çanakkale. 100 samples of cream pastries with plain, cacao and fruit flavored were analysed. After the enrichment, the samples were cultivated to the SMAC (Sorbitol MacConkey) medium and 82 typical (colorless and liquid) colonies were izolated. As a result of the forward microbiological analyses, neither Escherichia coli nor Escherichia coli O157:H7 weren?t detected. However the results of the biochemical tests shows that the cream pastries involved with the possible Enterobacter sp., Salmonella sp., Klebsiella sp. and Citrobacter sp. strains.In the conclusion, serotype of O157:H7 of Escherichia coli wasn?t detected in any of cream pastries. In addition to that, depending on the biochemical tests results cream pastries involved the other group of coliform bacteria. In this respect, it could be mentioned about that the pastries might not be sanitary and this might be a threaten for the public health.Keywords: Cream pastry, Escherichia coli, Escherichia coli O157:H7
