Abstract (EN)
In this study, it is aimed to develop a new method to increase the extract rate of Turkish tea. Firstly, optimum conditions have been determined to obtain the appropriate extract from the tea waste. 50 mL of aromatic liquid and 70 ℃ temperatures were found to be the most favorable conditions for 5 g tea waste. The aromatic liquid which was removed during the tea drying was used for this extraction. The extract from the tea litter was concentrated at 80 ℃ and pulverized 1/10 ratio on the oxidized tea. As a result of these processes, the extract rate of tea has been increased from 29% to 32% and there has been no negativity in tasting tests.
