Abstract (EN)

In this study, it was aimed to examine the changes in the amount of polyphenol (EGC, EGCG, EC, ECG, CG, GCG) and caffeine in different parts of the tea plant (root, stem, leaf, and apical bud) harvested in three shoot periods. Analyzes were performed by High performance liquid chromatography (commonly known as HPLC). Caffeine, GA, EGC, EGCG, EC, ECG, CG, GCG amounts were generally found as buds, leaves, stems, and roots in the samples examined. The highest caffeine was obtained from Shoot 1 in the top bud. The root and stem contain caffeine, although not much. Top bud and leaf EGCG had the highest value in all three shoots. Compared to the other two organs, polyphenols were found in the root and stem, albeit less.
