Abstract (EN)

One of their major aims of the most projects involving the collection and analysis of statistical data is to the isolate the factors which account for variation in the variable studied.In block design studies when blocks are not large enough to accommodate all of the treatments or when restrictions imposed by practical considerations prevent the use of all of the treatments in each block, then a balanced incomplete block design provides an efective alternative. The rationale behind the BIB design is an extension of the randomized complete block design, that is, to compare treatments within blocks in order to minimize extraneous variation in the comparison.The main application fields of the BIB design are control sampling, balanced half-samples, random response procedures, tournament and lottery designs and evaluation studies.In recent years, in addition these research areas many enterprises started to use balanced incomplete designs in food industry for new product development, market strategies, consumer?s sensory characteristics and trends.In this study, considering these progressions the features of BIB design and t sensory analysis were narrated. The development of the design was emphasized and it is represented the BIB desings give better results comparing the preferred sensory analysis methods in the decision process in relation with sensory fatigue. Further, product maps which give a quick, visual summary of sensory evaluation data are introduced and analogize graphical methods used in product comparison.In the last chapter of the thesis, an implementation based on extended statistical analysis of ranked data from balanced incomplete block and paired comparison designs and product maps applications were done and the results were discussed.Key Words : Balanced incomplete block designs, sensory analysis, rank method, product maps, sensory fatigue.
