Abstract (EN)

In this study, changes in meat yield and biochemical compositions such as protein lipid glycogen and glusid were investigated by subjecting individuals of the economically importance shellfish species of black mussel (Mytilus galloprovincialis) and horse mussel (Modiolus barbatus) harvestable size to depuration process for 72 hours. At Kocaman Balıkçılık Company, located in the province of Bandırma - Balıkesir, was carried out at depuration plant and the mussels were sampled for 3 days in the depuration tanks. As a result of the study, the meat yield of black mussel was found 17.5 % at the beginning (0 hours) of the experiment and 16.33 % after 72 hours. The meat yield of the horse mussel decreased from 16.76% to 14.01%. The value of protein in the black mussel was determined between 32.98% and 32.68%. At the end of the experiment, the lipid values were 5.81% in the black mussel and 5.14% in the horse mussel. The amount of glycogen in the black mussel decreased from 8.81 % to 7.89 % and the content of glycogen in the horse mussel reduced from 1.89% to 1.21%. The decrease in the meat yield of black mussel was not found to be statistically significant (p>0.05). The reduction in the meat yield of horse mussel was statistically significant (p<0.05). Changes in the biochemical composition of mussels with this difference were statistically significant only in the glycogen ratio of horse mussel (p <0.05).
