Abstract (EN)
In this study by repeating the unhairing and the liming process on ten occasions it was established that on each occasion total of aerobic mesophile, proteolytic, lipolytic bacteria and aerobic spores with total of aerobic fungi, proteolytic and lipolytic fungi were present in the process fluids. In study 10 cattle hide domestic skin was used as a material. Skins were processed with antimicrobial substance and without antimicrobial substance. In research Busan 30WB bactericide and Busan 85 fungicide, a commercial preparation, used as an antimicrobial substance. Combination of these 2 commercial preparation added to soaking floats at the beginning of soaking process. In study because liming float used repetitive, remaining arsenic in liming float and quantity of lime determined and diminishing of these substances added to liming float which will be reused. Furthermore, evaluation of microbial development salt quantity determined in liming floats. At the end of unharing and liming process, proceeding floats samples taken at every turn. In samples the total numbers of the aerobic mesophile, proteolytic and lipolytic bacteria were determined in salt concentration of 0%, 5% and 10%. The total numbers of the aerobic fungus, proteolytic and lipolytic fungus were determined in the same salt concentrations. In research based on the use of antimicrobial substances the salt concentration of samples 1-10 indicated the presence of bacteria at a certain level. Accordingly, samples 1-10 the total aerobic mezophile bacteria count of between 2,0x101 and 3,9x102 cfu/mL the aerobic spores count beyond the second sample registered between 1,0x101 and 1,6x102 cfu/mL. Proteolytic bacteria count registered at between 1,0x101and 3,8x102 cfu/mL, while, lipolytic bacteria count registered between 1,0x101 and 5,4x102 cfu/mL. Especially in 5% salt concentration the number of proteolytic and lipolytic bacteria higher when compared to other bacterial groups. Research yielding a higher fungi count than that of bacteria in whole salt concentration and accepted as an important finding. Accordingly, samples 1-10 yielded the total aerobic fungus presence ranging between 1,0x101 and 2,8x103 cfu/mL, proteolytic fungus ranging between 1,0x101 and 1,2x103 cfu/mL, and lipolytic fungus ranging between 1,0x101 and 3,5x103 cfu/mL. In study when salt concentration taken into consideration, in 10% salt concentration both groups of bacterial and fungal numerical values determined as lower compared to other salt concentrations. Key Words: Liming process, reuse of liming floats, number of bacteria and fungi
