Abstract (EN)
In this research, some physicochemical properties of camel milk and camel milk oil were determined. Camel milk, Acidity amount, % dry matter, pH value, % water ratio, protein amount, oil rate, amount of dry oil, freezing point, refractive index results are; 7,5 ºSH, 15,7%, 6,68pH, 84,3%, 5,84%, 3,33%, 12,37%, 0,543 -mºC, 1,346 nD The results of camel milk oil's pH, free fatty acidity, peroxide number, iodine number, refractive index, viscosity, saponification number, and non-saponifying substance respectively; 5,19 pH, 2.7%, 0 meq O2 / kg, 31,53 I2 g / 100, 1,3626 nD, 16,5 mPa, 174,8 mg KOH/g, 0,34 g/kg , myristic acid 11.27%, palmitic acid 31.23% oleic acid 30.74% linoleic acid 2.03%, myristoleic acid 2.03% stearic acid 18.75%, cholesterol 95.95%, camplesterol 0.48% , total betatocyterol 1.41%, delta 7 stigmastenol 0.27%, delta 7 avenasterol 0.18%, stigmasterol 0.58%, bracicasterol 1.13%, Na 30.05 ppm, Si 69,33 ppm, P 101,55 ppm, K 22,75 ppm, Zn 1,86 ppm. were determined as. After the study, capsule was made after using the lyophilization method of camel milk oil and these results are important for the future.
