Abstract (EN)

The main purpose of this study is to examine the effect of digitalized gastronomy on locality, within the scope of the theory of creative destruction and the theory of planned obsolescence; If there is, it is to determine the direction. In addition, it is aimed to reveal the views of faculty members and staff who teach and/or work in the field of Gastronomy and Culinary Arts on the subject. The study was examined in the sample of individuals who are faculty members/ staff in the field of Gastronomy and Culinary Arts and who work in this field. Firstly, the scale was developed to cover the variables determined in the research, and after the necessary stages, the finalized questionnaire was sent online to the study population of 608 people, three times at regular intervals. The answers of 315 people who received feedback were included in the data set. The collected data were analyzed with different statistical programs. However, in order to measure the relationship and causality between the variables in the research model, the data set was subjected to correlation and regression tests. As a result of the research, it has been concluded that digitalized gastronomy will not cause creative destruction on locality. However, it has been determined that the gradual and holistic inclusion of digitalization in gastronomy will be beneficial in terms of locality, and this situation can be explained by "creative unification", not by creative destruction. While the same is not the case for planned obsolescence, it has emerged that digital gastronomy will cause planned obsolescence in the long run. In addition, a relationship was determined between digitalization and customers' anxiety levels; It has been seen that as the digitization and experience of gastronomy increase, the uneasiness of the customers will decrease. The model proposed in the research is a first for the gastronomy literature; This makes an important contribution to the relevant literature. Keywords: Digitalization, Digital Gastronomy, Regionalism, Creative Destruction Theory, Planned Obsolescence Theory
