Abstract (EN)
It is generally known that vacuum evaporators are used especially in nourishment, medicine and chemistry sectors. In these sectors, juice and dairy farming are at the front rants. There is so little information on flowing types and heat transfer characteristics, regarding many fields to be useful in design of vacuum evaporators.It is aimed at improvement and privatization of necessary information infrastructure for more effective designation and operation of vertical pipes exchangers used in production of concentrated juice and concentrated milk in milk and juice industry.In evaporators operating according to falling film evaporator at low pressure and heat values (under vacuum), by changing falling level, dry component concentration in liquid is changing.In this study, it is aimed to changing according to concentration, transferable heat quantity associating with process parameter, thank to this, process serves as a basis to dimension in a evaporator, moving from main input, to reach design and in case of quantity and quality sufficiency of experiment results, with the assistance of relevant heat transfer to be described a ?Nusselt Function?, to model evaporating process.Thus it is aimed to gain data which lighten the relationship of Capacity-Elevation-Concentration mechanism known as vacuum evaporators in nourishment and chemistry sector. In addition to this, multi- purpose mechanism which can analyze the relations between heat transfer and flowing types in flow will be gained.Detail researches in literature show that prescribed studies have not been carried out yet.Study composes of two parts as theoretically and experimentally.
