Direct steam injection heat exchanger design and high temperature applications

Abstract (EN)

There are plenty of diffirent type heat exchangers in various fields of industry, as it is with food industry. Especially in food industry heat exchanger design is important for the end product quality. Even slight changes in temperature and heat exchanger type has great effect on end product quality. In this thesis direct steam injection systems are studied and the necessary design and analysis were made for the processing of two different products at high temperature with the same direct steam injection system. Three different safety factors have been selected and used for determining the steam flowrate for each product. As a starting point steam flowrate is calculated manually with design temperatures as referance and this steam flowrate was taken as the safety factor 1. As a result of this analysis, a second safety factor is selected and after the analysis of the second safety factor, a third safety factor is selected and analyzed and three safety factors have been compared. Analysis were made by Ansys Fluent and examined in CFD Post and safety factors for both products were determined and examined. As a result, it is seen that for two diffirent products two diffirent safety factors must be used. It is concluded that both products may be heat treated in the same system but the safety factor to which determine the steam flowrate must be individual to the product itself.
