Abstract (EN)
The phytase identified in the literature is also known as myo-inositol hexakisphosphate phosphohydrolase with its chemical name. Phytases are be produced by plants, animals and microorganisms. Microbial-derived phytases are preferred for biotechnological applications. Phytases are preferred in food industry, feed additives, paper industry and soil improvement. In biotechnology, phytase enzyme studies are an effective tool to be used in the production of enzymes, or in the development of their properties. The aim of this study was to investigate the molecular identification of Lactobacillus brevis strain isolated from Kashar cheese by 16S rRNA, to determine its phytase enzyme activity and to evaluate its possible industrial benefitability. The identification was performed using the 16S rRNA method. The identification rate of Lactobacillus brevis was 99% and the optimum temperature of the extracellular phytase enzyme was determined as 50°C and the optimum pH was pH 3.0. According to the results, it has been confirmed with our study that the bacterium can be introduced to the industrial use due to the characteristics of the enzyme produced by this bacterium and that it can be used as a starter culture in the food industry.
