Abstract (EN)
In this study, the necessary analyzes and calculations were carried out in order to determine the parameters for the design of an inductive filling machine which works with induction heating technique and performs pasteurization and sterilization processes during the filling of liquid foods. In these analyzes, pipe models with different designs were made for liquid foodstuffs. The first of these is straight pipe; the second design is a pipe with flow breaker blades on the surface to increase heat transfer, and the third design is a design with a shaft in the center and flow breaker blades on this shaft. In the study, calculations and simulations were performed for 3 different heat treatment temperatures. These heat treatment temperatures are considered to be 90°C, 120°C and 150°C and the effect of the design and temperature value on the fluid in the pipe was examined by analysis. In the first two designs, the temperature was transferred from the pipe surface to the fluid; in the third and final design, a shaft in the center and flow breaker blades on this shaft are designed and the situation where the temperature is transferred to the fluid through this shaft is analyzed. Water and milk as liquid foodstuffs which flow analysis and calculations are performed are discussed. Flow analysis was obtained by reflecting the physical properties of the related fluids into the simulation; in addition, the microbiological status of the food was examined and the food safety status of the design was examined. As a result of the analysis; considering cost based, it is seen that the most efficient design is the finned tube with high heat transfer area. When food safety is considered, it is seen that designs with long pipe length give better results.
