Cold storage of "Eylül" and "Hachiya" persimmom genotypes grown in Dörtyol [Hatay] region

Abstract (EN)

The aim of this study, effects on the quality of astringent 'Eylül' persimmon genotype and astringent 'Hachiya' persimmon variety fruits grown in Dörtyol (Hatay) were determined in cold storage and modified atmosphere packaging (MAP) during storage and shelf life. As the material in this study, 'Eylül' persimmon genotype and 'Hachiya' persimmon variety grown in Dörtyol (Hatay) were used. Fruitsstored at 0±0.5 C and %90±5 relative humidity for 4 months in cold stores and were analyzed every month. In addition to persimmon fruits stored in cold and MAP bags were kept at 20 ºC and 70±5 % relative humidity for 7 days and were analyzed. The weight loss, appearance (1‒5), CO2% and O2% concentrations in the bag, incidence of physiological disorders and fungal decay, drying calyx, fruit skin and flesh color, fruit flesh firmness, total soluble solid content, acid content, pH, tannin content, vitamin C content and taste (1‒9) will be determined during storage and shelf life. According to our findings, the weight losses of both varieties did not exceed 10% of the total weight of the product, so 'Eylül' persimmon genotype and 'Hachiya' persimmon variety did not lose their economic marketability. Flesh browning and/or softening from physiological disorders was higher than peel browning during storage and shelf life in 'Eylül' persimmon genotypes and 'Hachiya' persimmon variety. No calyx drying was observed in 'Eylül' persimmon genotype fruits. Fruit flesh firmness were a factor limiting on the storage and shelf life in 'Eylül' persimmon genotype and 'Hachiya' persimmon variety. The taste value increased beyond the limit acceptable to the consumer at the end of the 2nd month in 'Eylül' persimmon genotypes and 'Hachiya' persimmon variety. When all quality parameters are assessed together, 'Eylül' persimmon genotype fruits can be successfully stored for 2 months and 'Hachiya' persimmon variety fruits can be stored with good quality for 3 months under 0 C (± 0,5) temperature and 90% (± 5,0) relative humidity conditions without losing their quality. Due to the low weight loss and higher appearance scores, the use of MAP for cold storage in astringent 'Eylül' persimmon genotype and 'Hachiya' persimmon variety will be yield positive results. 2020, 111 page Key Words: Persimmon, 'Eylül', 'Hachiya', cold storage, quality
