Abstract (EN)

The reasons such as technological developments and changes that started with the industrial revolution and continued over time, women's entry into business life, and the ease of access to products thanks to increasing opportunities and opportunities have led to changes in many areas of life. It is obvious that these developments, which have positive effects such as facilitating life and increasing welfare, also cause us to turn into a consumer society, harming the ecology, as well as wasting resources that are already in limited quantities. Considering the ecological and economic conditions in the world, both individuals and countries should come together to seek solutions and prevent waste. In this context, in the research; In addition to waste and sustainability issues, studies on bread and its waste have been revealed through literature review. Minimizing waste is an important element for sustainable food. In this context, in order to reduce the waste of stale bread to zero, the other part of the study is to create recipes with stale bread, which have been tried repeatedly. Different types of bread were tried for each recipe in the recipes, and the type and amount of use most suitable for that recipe was recorded and the final version was photographed. The recipes created are grouped under 4 titles as breakfast foods, snacks, meals and desserts, and there are 46 in total. The ingredients list was written by giving the ratios of each recipe in the form of spoons, glasses and g, ml; its preparation is explained and the tricks to be considered while making the recipe are expressed in detail.
