Abstract (EN)
In this study, in terms of nutrition, some phytochemical analysis were performed in mulberry, walnut, cherry and cranberry fruits which have a widespread use, and biological effects of these fruits on H2O2 and CCl4 against toxicity in yeast cells and rat tissues were investigated. According to the results, the highest flavonoid content has been found in black mulberry, and the highest lipophilic vitamins and pyhtosterol content has been in cranberry. Mulberry fruits were found to be higher in sugar content. In the test results of In vitro, when H2O2 was added to the standard Saccharomyces cerevisiae culture, the increase in palmitic (16:0), stearic (18:0), palmitoleic (16:1, n-7) and oleic (18:1, n-9) acids were observed. In the cultures where fruits has been used, in addition to these fatty acids, linoleic (18:2, n-6) and linolenic (18:3, n-3) acid levels were also detected (p<0.05, p<0.001). When CCl4, rutine and flavonoid extract added to S. cerevisiae culture, an increase in the levels of some fatty acids, ?-tocoferol, ergosterol and vitamin K were observed (p<0.05).The study on rats, as a result of CCl4 application, an increase in some of the fatty acid levels were observed in serum and other tissues (p<0.001). Against the CCl4, the groups using walnut extract and rutine application were close to the values of the control group in terms of fatty acid level in serum. Against the H2O2 and CCl4 applications, GSH level was increased and MDA level decreased in some tissues of rats when mulberry and walnut extract applied (p<0.05, p<0.01). Although ?-tocoferol levels in erythrocytes decreased with the exception of the rutine+CCl4 group an increase was observed in other tissues (p<0.05). The levels of cholesterol in serum and tissues of applied groups were higher than the control group (p<0.05, p<0.001).As a result, in the studies with fruit, CCl4 and H2O2 in in vitro media, differences were observed in different proportions in the amounts of the latest products of enzymes that were used in the synthesis of fatty acid, phytosterol and vitamin. In addition, the similar results were determined in fatty acids and cholesterol biosynthesis of rat tissues.Key words: Black mulberry, cranberry, cherry, cholesterol, fatty acid, GSH, lipophilic vitamins, MDA, mulberry, rats and tissues, Saccharomyces cerevisiae, walnut.
