Determination of the effects of the processes in the production of apple juice concentrate on pesticide and patulin content

In this study, samples were taken from the production stages of the factory that produces apple juice concentrate and 212 pesticides and their degradation products and patulin analyzes were carried out in the LC-MS/MS device and the effects of the production stages on these parameters were examined. Acetamiprid, diclofop methyl, diflubenzuron, fenpyroximate, malathion, methoxyfenozide, pirimicarb, propargite, pyridaben, thiacloprid pesticide actives were detected in the samples taken from the production stages. Activated carbon reduced the amount of thiacloprid an average of 64%. The milling and pressing steps of the mash had the greatest impact on the amount of malathion. The maximum decrease in the acetamiprid was 66.7% during the pasteurization stage. The decrease in the amount of diclofop methyl was the highest at the ultrafiltration stage with 61.74%. Fenpyroximate showed a decrease of 72.41% during the clarification stage. Pyridaben was determined as12.85 µg/kg in the 8th production day and it decreased below the detectable level after selection, sorting and mash processes. There was 39.60% decrease in the amount of methoxyfenozide during the clarification stage. The highest decrease in diflubenzuron occurred in ultrafiltration with 39.35%. Pirimicarb showed a decrease of 58% after ultrafiltration. Although all steps were effective in terms of patulin content, the application of activated carbon had the greatest impact on the amount of patulin.Activated carbon application decreased patulin between 41% and 74% compared to the initial amount.
