Comparative determination of chemical and biological contents of industrial and home-made canned food and pickle samples

Abstract (EN)
The general scope of this study is comparative determination analyses of industrial and home-made canned foods and pickle samples, such as evaluation of antoxidant activities, determination of phenolic compounds, organic acids and sugar contents by HPLC, and examining the salt concentration, titration acidity and pH values by using different chemical analyzing methods as well as investigation of mesophilic bacteria, total lactic acid bacteria, total yeast and counting mold by using MRS, PCA, and PDA agar. To determine the antioxidant activities of canned food and pickle samples, ABTS radical scavenging activities, DPPH free radical scavenging activities, FRAP (ferric ion reducing power), and CUPRAC (cupric ion reducing antioxidant capacity) in vitro methods were carried out. The results of antioxidant activities of the samples were compared with BHA, BHT, tocopherol, pirogallol ve ascorbic acid as standard antioxidants. According to the results home-made pickle and canned food samples were showed close levels with the standard antioxidants. The better antioxidant activities of the traditional home made canned food and pickle samples were obtained compared to the industrial samples. According to the HPLC results, ascorbic acid was found highest level in traditional home made canned food samples. Remarkably, comparative higher amounts of glucose and fructose were found in the industrial commercial pickles and in the traditional home-made canned food samples. According to the microbial studies, bacteria, yeast and mold species were not be observed in the traditional home made canned food samples. Lactic acid bacteria were not seen in the indusrial samples, only seen in the home-made pickles. Mesophilic bacterias were seen as close levels in all of the pickle samples.
