Application of food safety management system (ISO 22000) inmeat processing factory

In this thesis, a food safety management system (ISO 22000) was planned and implemented at the Akçasaray Meat Processing facility located in the Şinik Organized Industrial Zone in the Akçaabat district of Trabzon. In this system (ISO 22000), job descriptions, procedures, plans, instructions are created in the factory and necessary departments are established. Meat processing plants are trying to perform their services according to a system and standard in order to make meat production more quality and safe with the increasing competition among them. It has been observed that the factory owners have brought quality and food safety to the forefront in the process from minimizing customer complaints that may occur in order to meet the conscious and selective demands of today's consumers, from the meat purchase stage until they reach the packaging and sales points. In this study, some problems will arise in the food processing plant about food safety, and for the solution of the problems, the requirements of the ISO 22000 certificate of the business management have been implemented. As a result of the research, success was achieved in the implementation of ISO 22000 standards of the factory. As a result of the research to be done, by creating the necessary resources (production area, warehouses, kitchen area, education, personnel, etc.), the applicability of ISO systems has been revealed, adding value to the product quality and an increase in the production amount. As a result of this study Akçasaray Meat Processing Plant has won the ISO 22000 certificate or established in Turkey however has shown the way in terms of the applicability of the ISO 22000 certificate meat processing plants will be built.
