Abstract (EN)

Written sources are the most important references that help us understand and transmit culinary culture to the present day. Although indirect studies such as culinary culture studies, food and agriculture production studies are also important among written sources, but primary sources are cookbooks and recipe books. We learn details such as how the dish is named, what ingredients are used, and which cooking techniques and measurements are used from cookbooks. Although Turkish culinary culture's cookbooks date back to the classical period of the Ottoman era, more systematic sources appeared in the 19th century. Cookbooks from the 19th century until the Alphabet Reform are important due to being printed rather than handwritten. The cookbook "Evde Aşçı Kadın Yahut Mükemmel Yemek Kitabı" by Mahmut Nedim bin Tosun, published in Ottoman Turkish, is one of the boks that has not been adopted into modern Turkish. The book which is the subject of this study, has been adopted to the present day and details about its content, food names and products used have been revealed. Document analysis method was used in the study. Transliteration (letter translation) was used as the basic method for adaptation to the present day. The aim with transliteration was to ensure a fully understandable transfer of the content. Ten recipes from the book have been combined harmoniously to create a menu consisting of five courses. The menu is structured as follows: amuse-bouche, hors d'oeuvre, intermediate course, main course, and dessert. For this menu, products frequently consumed in the 19th century have been selected, and the recurring round theme from the book has been chosen as the central motif of the menu. In the interest of continuity of tradition, not only have the ingredients been adapted to the present day, but the connection of the created menu with the historical culinary culture has been maintained.
