Physico-chemical properties of ornamental plum (Pissardii nigra) seeds and seed oils collected from different locations.

In the light of this research, physicochemical properties of Pissardii nigra seed and seed oil were determined by analyzing ash, moisture content, moisture content, oil content, peroxide value, free fatty acidity, iodine value, color determination, mineral matter, saponification amount, unsaponifiable matter, sterol composition, fatty acid composition, tocopherol, and FT-IR. Accordingly, the ash, moisture content, a thousand kernel weight, and oil content values of prunus cerasifera pissardii nigra seeds were determined as follows: %1.65-2.18, %4.59-4.96, 50.81-69.49g, %33.63-39.83, respectively. The values of free fatty acidity, peroxide value, iodine value, and saponification amount, unsaponifiable matter, instrumental red and yellow color parameters, as well as total sterol and total tocopherol contents of plum seed oils were analyzed as follows: % 0,18-0,2, 1,40-1,83 meqO2/kg, 98,01-104,05, 20-77 mgKOH/g, 0,206-0,301%, 2K/70S-3K/70S, 3230,88-5471,83 mg/kg, and 4.507-19.546 mg/L, respectively. When the fatty acid composition of prunus cerasifera pissardii nigra seed oils were examined, dominant fatty acids were identified as oleic acid and linoleic acid. In terms of mineral matter, as dominant Fe, Mg, P, Na, Ca, and K were analyzed in plum seed oils. Regarding the sterol composition, beta-sitosterol, campesterol, delta-5-avenasterol, delta-7-stigmastreol, cholesterol, stigmasterol, and delta-7-avenasterol were detected. Delta-5-avenasterol was found in higher amounts. As a result, it has been determined that ornamental plum seed oils obtained are nutritionally rich in terms of their mineral content, fatty acids, and sterol composition. The peroxide value and free fatty acidity values indicate their suitability for consumption as food. Additionally, it has been found that they can be processed according to vegetable oil technology.
