Abstract (EN)

Aim: Turkey provides a large part of the dried apricot production in the world alone, thus Malatya province is defined as ''the capital of the Apricot''. Turkey export both dried and fresh aprocots. The sulfation process is carried out in order to extend their life of storage of dried apricots. But sulfation also prevents the export. The European Union has brought that 2000 ppm of sulfur dioxide limit which is the biggest obstacle in front of the apricot export. In this context, the purpose of our study, when consumption of apricots which is contain exceed amount of 2000 ppm of sulfur to observe the changes in terms of oxidative stress. Material and Methods: In our study, totally 84 rats were feed with contains different amount of sulphur or sun dried apricots chow for 3 months. The levels of MDA, GSH, TAS, TOS, OSI, IL-1 β ve 8-dOHG are measured in serum and liver tissue samples. Additionally, histologic injury score was determined in the liver. Results: There were no differences only between TOS levels of serum and liver oxidative stress parameters. In the group fed with sun dried apricots have the highest TAS levels and lowest OSI results. 1000 ppm group have the highest level of MDA, IL-1 β ve 8-dOHG while, 2000 ppm group has the highest GSH level. There is no statictically difference between groups in terms of liver injury scores. Conclusion: Consumption of apricots which contain different sulfur ratio did not show significant alterations on both oxidative stress parameters and liver injury ratio.
