Operationalizing the foodscape in the experiences of gastrotourists

Abstract (EN)
The aim of this study is to operationalize the concept of foodscape so that local people can directly benefit from tourism economically and socially and to support the development of sustainable tourism. For this reason, it is aimed to develop an experience where gastro tourists can experience all dimensions of the foodscape. In this context, firstly, the iconic foods of Mardin were determined by systematic literature review and interviews with local people (15) and Tourism Operation Certificated Food and Beverage Enterprises (9). Then, interviews were conducted with expert academics (18) and menus suitable for developing experience were identified. After the menus were determined, the researcher designed three different experiences under the roof of the foodscape mixed experience: "Gastronomic Journey with Local Families", "Meeting with Local Flavors in the Kitchen" and "An Evening Full of Traditional Food". Seven local tourists traveling to Mardin with gastronomic motivation and two families eager for a gastronomic experience participated in the implementation phase of the designed experiences. The implementation stages of the experiences designed within the scope of the study were carried out between 5-9 May 2025. As a result of the research, it was determined that family members were satisfied with the experiences taking place in their homes and wanted the experience to take place in their homes again. In addition, it was concluded that families would recommend their experiences to people around them. It was determined that the tourists who participated in the research were also pleased with the experiences held in the homes of the locals and the interaction with the local people. The study concluded that such an experience, especially in rural areas, could be an important source of economic income for the local people. In addition, with the implementation of the designed experiences, women's employment can be provided in the tourism sector, job opportunities can be created for the young population and contribution can be made to the prevention of migration.
