Abstract (EN)

Nowadays, shelf life and product quality are very important since people have started to use more packed foods. Recent studies have proved that vacuum cooling has great advantages over other cooling technologies. In the first part of this study, the freezing stage of the vacuum cooling process was investigated with the simplified one-dimensional transient analyses which were done in Matlab2020b using the thermal resistance network model approach. Parametric analyses were done by changing design parameters such as; working logic and product weight. Analysis results showed, gradual working logic was better and safer than single-step working logic. The temperature difference between internal air and insulation was lower than 1.5K, but the product core temperature was 4.15K colder. The evaporator capacity was calculated as 150W. In the second part of the study, a rectangular chamber was proposed to improve cooling performance and machine quality. The maximum deformation of cylindrical chamber and a rectangular chamber with two support were found as 1.2mm. The internal air circulation of the machine comparment was investigated seperately. Grills, holes, separators, and diffusers were added to improve internal air circulation and reject warmed air to the ambient. Heat transfer rates through the condenser with and without seperator and diffuser were 4132W and 3200W, respectively, and the performance increased by %29. In the third part of the study, cooling performance of the rectangular chamber was focused. Three different insulation thicknesses (i.e. 40mm, 45mm, and 50mm) were compared based on evaporator temperatures. Due to mechanical and heat gain, 45mm insulation thickness was chosen. The fin on tube evaporator was added to increase system cooling performance and dehumilidate air before vacuum pump. Cooling performance was increased, and also air circulation analyses showed air passing through the evaporator.
