Abstract (EN)
In today's world, our supply of nutrition with healthier and cleaner foods is increasing rapidly. Global halal food market has emerged as a new growth sector in the global economy and has created a strong presence in developed countries. The most promising halal markets are the rapidly growing economies of Asia, the Middle East, Europe and America. With an increasing consumer base and growing growth in many parts of the world, the sector is a competitive force in world international trade. Businesses are seeking Halal food certificates to take part in the global halal food market. Halal food market is a rapidly growing market. In addition to receiving 8040 food management halal food certificates worldwide, this rate is 664 in Turkey and 17 in the TR 82 region. The food sector emerges as the second biggest sector in the TR 82 region. This study was carried out in order to determine the perceptions of Halal food certificate of food enterprises in TR 82 region in four parts. In the first part, concepts of Halal food and Halal food certificate are explained. The Qur'an is used as the main source in explaining the halal food concept. Halal food certification and process have been examined with all its characteristics, which is another definition covered in the research after Halal food definition. Halal food certificate is given to the institutions and organizations authorized to give Halal food certificate by giving importance to consumers and businesses. At the end of the first chapter, the problems encountered in Halal food certification process were mentioned and the obstacles in front of Halal food market were mentioned. In the second part of the research, the concept of SME and food businesses are emphasized. First, the definitions of SMEs in our country and in the world are given and the importance of SMEs is mentioned. Then, in the world and in our country, halal food certificates have been identified and statistics about these have been transferred. TR 82 region, which is the selected universe in the scope of the research, is explained together with its general characteristics and the amounts of food SMEs in this region are indicated according to various data sources. At the end of the second chapter, Halal food market in the world and in our country is told. In the third part of the research, the method applied in the research is explained. In this section, the research model which is essential to analyze by showing the purpose, the importance and the subject of the research is shown. The limitations of the research were reported after the hypotheses formed within the scope of the research were determined. The statistics used in the analysis of the data are mentioned by referring to the principles that apply to the construction of the survey used in the research. At the end of the third chapter, the way to obtain the data is indicated. In the fourth part of the study, the findings obtained from the data obtained from the participants are used. Firstly, the findings of the analysis, which describe the characteristics of SMEs after the socio-demographic characteristics of the participants, are presented. The validity and reliability of the scales used in the research were determined and dimensions were determined by applying exploratory and confirmatory factor analyzes. After the dimensions were determined, the hypotheses obtained within the scope of the study were tested.
