However, there is a decrease in agricultural and livestock activities due to the urbanization and migration from rural to urban areas and the decrease in rural population. In one-to-one interviews, we learned that many of the delicatessen owners have already made livestock in the highlands, but they have abandoned animal husbandry in time. This explains the phenomenon and is reflected as a result of migration from rural to urban areas. These migrations increased the demand for traditional delicatessen products. Because people were producing their own food in natural ways. However, the people who migrated from the villages and the plateaus ended their agricultural activities and started to obtain their organic products from these songs. In this direction, as a result of the increase in the interest of the people in natural foods and the high demand for these products in the province of Giresun, the products where the products are marketed have begun to be opened.As animal food, butter, precipitate, fresh cheese, honey and eggs, as well as pickles, dry foods and molasses are the most preferred products. These local and organic products are in high demand by local people and especially by expats. Turkey and one of the most preferred food sector in Europe is the traditional products sector. Depending on the ever-increasing human population, new sectors are created for the needs of people. Technology models applied in agriculture and animal husbandry together with developing technology disrupt the structure of organic products and negatively affect its naturalness. For this reason, the demand of organic products is increasing and new commercial areas where organic products are sold are produced. Due to the large number of imitations of agricultural and animal foods, the need for more natural and unmodified organic products has increased. Therefore, sales and production of local food products were among the most demanded sectors. In these commercial shops, which are called traditional delicatessen in Giresun, products brought from Giresun center, district and villages are sold and these products are in high demand by people.
