Hospitality, cost and cost control, the application examples in Ankara city in the hospital administations

In this study, the accommmodation, the food and beverage and other services that have been served in hospital outside of medical services has been defined as hospitality, the nature, functions, organizations, the room and the food and beverage costs in service cost and cost control methods of hospitality in hospital has been examined. In Ankara city, four type hospitals that have different organization structures have been chosen as an example statement and theoretical proposals in this thesis have been compared with their applications. The accommodation department in hospital may be included from housekeeping, admitting office and patient relationship services. The housekeeping that gives the accommodation services may be organized as different unit by director having special education. The food and beverage department may be occurred from the purchase, storing, kitchen, services and cafeteria service units and activities in educated director within cooperation dietician. Other services units about hospitality may be considered as telephone, newspaper, journal sales, baber, flower shop and patient laundry units. In the hospitals, laundry, maintenance is assistant services department getting services to medical services and hospitality departments. Hospital service production has been investigated in two parts as the medical service and the room-the food and beverage service production. The cost information has been evaluated as regards pricing, service and profit planning, expense control. In the interviewed and examined four hospitals, the general information about hospital, the organizational structure of the accommodation service, the cost of room/bad service, the organizational structure of the food and beverage department, menu planning and production in the food and beverage department, cost structure and inspection of the food and beverage department, applications about other services defining in hospitality have been determined. When Sevgi Hospital has been investigated as regards hospitality, both hospitality and costing of these services have a different application than another public hospitals. In addition, the accommodation, the food and beverage and the other services applied in this hospital is carried on by a hotel management perception.
