Hekimbaşızâde Doctor Muhyiddin Nuri's work entitled Rehber-i Me'kûlât on the conceptual field of nutrition (Transcribed text- facsimile)

Medical manuscripts, which play an important role in revealing the lexical richness of languages and the changes they have undergone throughout history, provide significant data for researchers in the field of Turkish language studies. The work in question is registered in the Selimiye Manuscript Library under archive number 22 Sel 5565 and classification number 610. Written by Hekimbaşızâde Doktor Muhyiddin Nuri, the work was printed in Istanbul at the Mahmud Bey Printing House on 6 Muharrem 1323 (13 March 1905 / 28 February 1320). The work, which is 303 pages long, discusses the properties of animal, plant and mineral foods that play an important role in human nutrition, the effects of these food compounds on the human body, and nutritional measures. As a text on healthy living, gastronomy, and medicine, it possesses a rich vocabulary of plant, animal, mineral, spice, and ore names, as well as various compound names. This work, which also covers points to consider in healthy nutrition, the most important issue in the field of medicine, includes disease names and pharmaceutical terms. In this respect, the work is a source for studies on many topics such as food and drink names, dish names, mineral names, disease names, and pharmaceutical terms. The primary aim of this study is to contribute to the lexicon, particularly culinary dictionaries, by first translating the work into the Latin alphabet and then identifying the concept of nutrition, and to serve as a source for studies in the fields of medicine, dietetics, and gastronomy. The study consists of an introduction, analysis, text, and lexical inventory sections. The introduction explains the study's purpose and methodology. The concept of nutrition is explained, providing information about Turkish nutritional culture with consideration of the historical process. Information is provided about important medical texts from the 14th to the 20 th centuries, discussing the understanding of healthy nutrition and health preservation during this period. Subsequently, detailed information is provided about the life and works of Hekimbaşızâde Doktor Muhyiddin Nuri, the content of the work, and its copies. The analysis section presents the findings of the research conducted on the work. In the text section, the work has been transcribed and converted into Latin letters. A facsimile of the work is provided in the appendices section.
