Abstract (EN)

Today, there is a growing use of industrial enzymes. To benefit from enzymes to meet the increasing needs of many areas is called enzyme technology. Enzyme technology is confronted in many ways that facilitate life in a wide range of fields, such as food, medicine, and textiles. The use of various microorganisms during the production of enzymes has great advantages such as reducing costs and production of high amounts. The aim of the thesis is to discover a method that has respect to human health and the environment, to recycle the declining natural resources by recycling practices. It also aims to be a base for the country's economy, local production development and new investments. The reason for the selection of this topic is the need to contribute to the use of enzymes in paper recycling and to solutions that reduce imports. Increasing use of enzymes produced by microorganisms and their advantages are also an important influence, which makes it increasingly important to meet the demands for industrial needs and at the same time to develop them. Today, many enzymes can be obtained from various microorganism strains as a result of increasing opportunities. In this study, a cellulase activity was observed from a cellulose digesting fungus, Pleurotus ostreatus, which is a commonly used and consumed as food, and high activity was detected by comparing the absorbance with a commercially available cellulase enzyme (Cellulase Onozuka R-10 Product Code: 1023210005).
