Abstract (EN)
Enzymes are biomolecules that serve as catalysts in metabolic reactions, facilitating various biochemical processes. Advances in enzyme technology have expanded the application areas and increased the economic value of enzymes. Consequently, industrial enzyme research has gained increasing importance in the field of biotechnology. In this study, lipase enzyme was first purified from flaxseed oil (Linum Usitatissimum L.), and then its enzymatic properties were analyzed in detail to better understand its potential applications. In the enzyme purification process, centrifugation and dialysis methods were employed to effectively isolate the lipase enzyme. The SDS-PAGE method was also applied to determine the molecular weight of the purified enzyme. Following the purification procedures, the specific activity of the crude homogenate was measured at 9,8 U/mg. After 80% precipitation, the specific activity of the precipitate increased to 12,8 U/mg. In the analysis of the precipitate, optimum temperature and pH stability were evaluated. Additionally, the effects of inhibitors and activators were examined to determine the molecular weight.
