Dr. Zerrin ERGİNKAYA In this project firstly detoxification ability and binding capacities of aflatoxin Bi and aflatoxin Mi by probiotic lactic acid bacteria such as, Lactobacillus acidophilus and Bifidobacterium bifidum, were assessed. Secondly, the metabolites which were produced by probiotic lactic acid bacteria during normal metabolic activities and their effects on aflatoxin Bi in In Vitro and food model system (milk) were investigated. The results obtained can be summarized as follows: -The binding ability of aflatoxin Bi was found to range between 32.2 % to 37.0% and 31.0 % to 46.5 % for Lactobacillus acidophilus and Bifidobacterium bifidum strains, respectively in In Vitro conditions. -The binding ability of aflatoxin Bi was found to range between 29.5 % to 34.5% and 30.0 % to 38.5 % for Lactobacillus acidophilus and Bifidobacterium bifidum strains, respectively in food model (milk) conditions. -Abilities of Lactobacillus acidophilus and Bifidobacterium bifidum to bind aflatoxin Mi were found to range between 30.5% to 32.5% In Vitro. -Abilities of Lactobacillus acidophilus and Bifidobacterium bifidum to bind aflatoxin Mi were found to range between 28.8% to 29.3 % in a food model system. -Among the organisms studied, Bifidobacterium bifidum Bb 13 demonstrated significantly higher aflatoxin Bi and aflatoxin Mi binding ability than the other strains. -The different binding affinities of various strains of Lactobacillus acidophilus and Bifidobacterium bifidum to aflatoksin Bi and aflatoxin Mi were also determined. -It has been found that Lactobacillus acidophilus and Bifidobacterium bifidum have stimulated aflatoxin Bi production of Aspergillus flavus Key Words: Probiotic Lactic Acid Bacteria, Aflatoxin, Detoxification VI
