Abstract (EN)
In this study, nisin producer Lactococcus lactis LL 27 strain, originating from raw milk isolated in Turkey, were characterized by molecular techniques and also aimed to evaluate the antimicrobial activity of liposome encapsulated nisin produced by the bacteria.Genetic characterization of strain was defined by 16 S rDNA method, plasmids and protein profiles. Nisin was obtained by ion exchange chromatography. Different nisin loaded liposome formulations were prepared and its antimicrobial effect against some Gram positive bacteria, Gram negative bacteria and some Candida species were investigated by BioTimer assay.According to the results, liposomal formulations of nisin has antimicrobial activity against to the Gram positive bacteria at low concentrations. Besides this nisin formulations has antimicrobial activity against to Gram negative bacteria at high concentrations. Liposomal formulations of nisin has no activity against to Candida albicans at any concentration.
