Abstract (EN)

Due to the Covid-19 epidemic in the world and in our country in recent years, the increasing demand of the consumer against natural and organic foods has increased the interest in plants that grow in nature. This study was carried out to determine the morphological characteristics of wild plants consumed as vegetables in Malatya province. In the study; , Capsella bursa – pastoris, Malva sylvestris, Rumex sp., Papaver rhoeas, Cardaria draba, Sinapis arvensis, Amaranthus retroflexus, Polygonum cognatum Meissn, Mentha pulegium, Portulaca oleracea L., Chenopodium album L., Nasturtium Officinale, Scorzonera mollis, Tragopogon reticulatus Boiss, Arum dioscoridis plant characteristics such as wet and dry weight of the plants, plant height, stem diameter, leaf-shoot-branch number, leaf length, leaf width, leaf area, leaf thickness, petiole length, leaf stem thickness were investigated. As a result of the survey conducted in six districts determined according to population densities, most of these plants are consumed raw or cooked and consumed fresh, and some of them can be consumed by freezing, drying and brine.
