Abstract (EN)
In this study, it is aimed to determine the bioactivity of the seed proteins from different apricot varieties namely Hacıhaliloğlu, Hasanbey, Kabaaşı and Zerdali. Bioactivities of isolates obtained by precipitation at isoelectric point of seeds and hydrolysates obtained by enzymatic hydrolsis method were examined. Hydrolysis was performed using alcalase. The study includes soxhlet extraction, content of amygdalin, protein, total free amino acid determination, antioxidant and ACE inhibitory activity and SDS-PAGE analysis. In terms of ACE inhibitory activity Kabaaşı isolate and hydrolysate showed the highest activity, Hasanbey isolate and the hydrolysate of Zerdali showed the lowest activity. The highest antioxidant activity was found in isolate and hydrolysate prepared from Hasanbey. Kabaaşı isolate and hydrolysate showed the lowest antioxidant activity. Statistically significant differences were observed between varieties (P<0.05). The highest amount of amygdalin was detected in Zerdali seed and the lowest amygdalin was found in Kabaaşı seed. The amount of amygdalin detected in sweet apricot seeds (Hacıhaliloğlu, Hasanbey, Kabaaşı) is below the toxic level specified by EFSA. The results suggested that apricot seed protein may be potential source of plant protein in terms of ACE inhibition and antioxidant activity.
