Abstract (EN)

In the thesis study, the extraction method and analysis of the oil obtained from different types of cherry kernels were carried out. The aim of the study is to evaluate the use of cherry seeds as waste material in the food industry. The materials used were obtained from the garden of apricot Research Institute. The first phase of the study consists of phenological observations of the cherry tree, flowering, budding, transformation into fruit. The second phase involves pomological analysis of the fruit and finally the acquisition and analysis of the core and core oil. 6 kinds of study (Sweet heart, 0900 Ziraat, Starks Gold, Dalbasti, Lambert and Hardy Giant) SCKM cherry type, PH, acidity % in fruit yield, color analysis (L*a*b*), fat content, total antioxidant capacity, total phenolic compounds (TFM), phenolic compounds, fatty acid composition, XRD, FTIR, SEM analyses are reviewed. As a result of the study, it was found that the oils obtained from the nuclei of cherry fruits by the total antioxidant capacity and phenolic components have a rich content of oleic acid and linoleic acid.
