Inspecting of kitchen planning and materials used in some food plants performing mass catering in Mersin and Adana provinces in respect of adequacy with standards

Abstract (EN)

In this research 8 catering establishments located in Adana and Mersin provinces were evaluated acording to kitchen plans, materials consumed and equipment used in order to determine the suitability to the conforming standards. The results obtained showed that kitchen areas were insufficient in all. Subumits of establishments were sufficient at 67%; physical conditions and size of equipment were proper at 66% of establishments. Considening all equipment with their capacity sufficiency was determined at 66%, whereas this ratio for equipment running with electicity at 79%. The material of equipment was not proper at 44%. The material consumed for sanitory purpose was suitable at 14%, maintanence work at 25%, prerence of safety device and directory at 59% and absence of defects in all equipment at 55% were determined as sufficient.
