Abstract (EN)

Today, occupational health and safety is of great importance in fruit juice production, as in all sectors. The health and safety of employees directly affect production efficiency and quality. This thesis aims to determine the hazards and risks commonly encountered in fruit juice factories and to reveal the advantages and disadvantages of the 3T (Threats, Targets, Tactics) and Papyon methods used in the analysis of these risks. The main purpose of this study is to perform the OHS risk analysis at Gümüş Su Fruit Juice Factory with the 3T and Papyon methods and to evaluate the effectiveness and applicability of both methods comparatively. In this way, it is aimed to contribute to the determination of the most appropriate method for OHS risk analysis in the fruit juice sector. Within the scope of the thesis, firstly, the production processes and working environment of Gümüş Su Fruit Juice Factory will be examined in detail. Then, the hazards and risks in the factory will be determined and analyzed using the 3T and Papyon methods. The results of both methods will be compared and their advantages and disadvantages will be revealed. It presents a comparative assessment of the 3T and Bow Tie methods, emphasizing the importance of OHS risk analysis in the fruit juice sector. The findings will contribute to the determination of the most appropriate method for OHS risk analysis in fruit juice factories, thus helping to protect the health and safety of employees.
