Abstract (EN)
In the study, the change in milk components and milk fatty acid composition during the lactation period and the traits of lactation was investigated in the Morkaraman (n=32) and Awassi (n=31) sheep bred in the Research and Application Farm of Atatürk University. Also, the effect of the pasture on this change was detected. Daily milk yield, lactation milk yield and lactation duration were highest in pasture group as 55,44±5,57 kg, 0,410±0,02 kg, 128,43±6,29 days respectively. The means in Morkaraman and Awassi sheep were found as 40,76±5,56 and 54,51±5,50 kg for lactation milk yield; 106,74±6,28 and 132,30±6,21 days for lactation duration; 0,370±0,02 and 0,390±0,02 kg for daily milk yield, respectively. The least square means of values for fat, non-fat solid, protein, lactose, ash and freezing point in milk were determined as 7,06±0,17%, 9,49±0,04%, 3,13±0,01%, 5,44±0,02%, 0,91±0,00% and -0,707±0,00C, respectively. The highest fat, non-fat solid and lactose rates were found in pasture group as 7,83±0,18%, 9,55±0,06% and 5,51±0,03%, respectively; the highest protein rate was found in control group 3,14±0,02%. Although the highest fat rate was found in Awassi sheep (7,65±0,16%), the highest value of the other milk component were found in Morkaraman sheep. It has been found significantly differences between breeds in terms of caproic acid (C6:0) (p<0,05), linoleic acid (C16:0) (p<0,05) and total polyunsaturated fatty acids (PUFA) (p<0,001). Also, it has been found significantly differences between treatment groups in terms of caprylic acid (C8:0) (p<0,01), capric acid (C10:0) (p<0,001), lauric acid (C12:0) (p<0,01), heptadoconoic acid (C17:0) (p<0,001), stearic acid (C18:0) (p<0,01) and linoleic acid (C18:3n3) (p<0,05). The mean of Conjugated Linoleic Acid (CLA) (C18:c9t11) per 100 g milk was found as 0,56±0,02% and 0,75±0,02% for pasture and control group; 0,69±0,02% and 0,61±0,02%. Also; the rate of atherogenic index per 100 g milk were determined as 2,34±0,10% and 2,05±0,10% for pasture and control group; 1,99±0,11% and 2,35±0,09% for Morkaraman and Awassi sheep. It has been determined that the lactation period is more effective on milk fatty acid composition than breed and breeding system. It is recommended to carry out studies to increase the CLA ratio in milk with artificial pasture and different rations.
