In this study, it was aimed to produce isomaltooligosaccharide, a prebiotic product, in laboratory scale using different raw material maltose syrups and different beta amylase and transglucosidase enzyme dosages. The effects of parameters such as raw material maltose%content, beta amylase enzyme dosages and transglucosidase enzyme dosages on IMO fractions and total IMO percentage of the obtained isomaltooligosaccharide syrup were investigated. IMO fraction distributions of the isomaltooligosaccharide syrup obtained as a result of each reaction by HPLC analysis were examined. The production conditions have been determined considering the conformity of the obtained IMO profiles to commercial products. The highest total IMO content was achieved with 61.1%. The reaction conditions corresponding to this output are; 80%raw material maltose value, 1.4 kg / TDS beta amylase enzyme dosage and 0.70 kg / TDS transglucosidase enzyme dosage. In addition, the reaction was carried out at 61 °C, pH 4.5 for 24 hours.
