Abstract (EN)

IX SUMMARY The name of this study is "Kitchen Management In Hotels And A Research On Effects Of All-inclusive Practices On Kitchen Management". The kitchen which is qualified as the hearth of hotels is a department includes kitchen staff whose responsibilities, authority and duties are identified related to an organizational structure and in a hierarchy instead of being merely a physical space with equipment and working areas that are built for food production. Kitchen is in the organizational structure of food and beverage department in hotels. The aim of kitchen is to realize food production in the limits of cost, quality and hygiene standards of hotel. But production in kitchen is not considered only food preparation and cooking, production steps express a process which contains purchasing, receiving, storage, preparation, cooking and serving of food and cleaning after production. While the food production is being realized in the kitchen, the hygiene standards that are related to health of guests are as important as cost and quality standards which refer an amount of profit the hotel seeks to earn and the satisfaction of guests whom the kitchen provides service. So sanitation and hygiene are important concepts in hotel kitchens and the necessity of implementing sanitation and hygiene rules emerges. When the kitchen is considered in the point of management, the management concept in the kitchen and managerial functions, physical planning of kitchen, menu planning, production planning, organizational structure of kitchen, recruiting, training and motivation of kitchen staff, communication in the kitchen and control in the kitchen become important subjects. The all-inclusive practices which have grown recent years have important effects on food and beverage department and the units of this department in hospitality businesses. So kitchen is influenced in positive and negative ways because of all-inclusive practices. In the research section of this study the probable effects of all-inclusive on kitchen management are targeted to determine and in this term a research is realized in Antalya.
