The expectations and desires of the customers should be met appropriately. Unsatisfied or undermet explanation and desires on a timely manner could couse unfovorible results for establishments. To prevent these results, to meet customer demands, and to maintain businness operations, establishment should keep proper amount of materialis maintaining excess or short amount of materia list then the needed amount could bring burders to the business. The best way of preventing this, is to determine of optimal stocks nolices. And that explains the necessity and importance of material management and its prin ciples. Managers of the businness should manage materialis that will be utilized in their operations according to rational principles. To do this they should establish and supervise an independent material policy and establish an inde pendent material managemenet department of organize this function. Material managent function in the establishments should be guided by principles of to increase profits and controling costs, because material managemenet will help effective operations of purchasing system. In addition to that material mana gement will take into consideration of trends of the business as o whole and bring solutions to levels of material in a rational manner. Furthermore, mate rial management will help to make sound decisions and optimal usage of stocks in a volatile economic environment. This is a very important point beca use stock represent unused scarce resources that set apart for meetingexpected demands In the future. The findings of our study could be articula ted as follows: - Businesses that operates in the hospitality industry shoud establish an effective material management and control, - Businnes should establish on independent purchasing deparment and centrelize purchasing activities. - Duties and responsibilities regarding purchasing department should be clearly identified and defined. - Information that obtained from a good purchasing management will help top managemenet to make sound decisions, determine optimal material levels that is necessary in evaluating new investment projects. As a conclusion we could say that, is businnes utilite purchasing and material management techniques, their profits will increase, businesses will grow and their contribution to tourism industry and to our national economy will be even graeter.
