Abstract (EN)

In this research, investigated that influence of some emulsifiers and their combinations on sponge cake quality. Therefore wide application emulsifiers were used in bakery industry such as polyglycerol ester of mono and diglyseride fatty acids and single and double-triple combinations of propylene glycol esters of fatty acids were used. Emulsifiers transforms from powder to jelly form with using magnesium stearate and gliserol and used in sponge cake experimentation. At the end of sponge cake experimentation; with the usage of emulsifiers in the case of powder, getting cake dough partially lumpy, transforming form of emulsifiers powder to jelly, removing of materials in dough, homogenous structure occurs and sponge cake affects positively from this condition. It is determined that, sponge cakes cooked with emulsifiers, consist the mixing of mono and digliseride with propylene glycole esters of fatty acids, have better properties than others.
