Investigation of the conformity of some fruit juices sold in the market with related standards

Abstract (EN)

In this research, the conformity of some of the fruit juices (apple, pomegranate, orange, grape) sold in the market with the Turkish Food Codex and Standart have been investigated. For this purpose; pH, total acidity, soluble solid content, formol number, Hydroxil Methyl Furfural, preservatives (benzoic acid and sorbic acid), contents of minerals (K, Mg, P, Na and Ca), metalic contaminants (Cu, Zn, Fe and Sn) and heavy metals (Pb, Cd and As) analyses have been made on the %100 well-qualified products of firms dominating to the market.In the analyses performed on 16 samples, it has been seen that the values were changed between; pH; 3.39-4.03, water soluble dry matter; %11.37-16.61, formol number; 2.98-20.97, Hydroxil Methyl Furfural; 0.34-27.39 mg/L, benzoic acid; 0.60-2.71 mg/L, sorbic acid -4.85 mg/L, K; 726.51-1928.97 mg/L, Mg; 46.56-126.73 mg/L, P; 56.70-176.06 mg/L, Na; 19.00-167.50 mg/L, Ca; 19.23-197.74 mg/L, Pb; 0.036-1.171 mg/L, Cd; TEDB-0.017 mg/L and As; TEDB-0,034 mg/L. For the metalic contaminants, these values are found below the values limited in the standards.Keywords: Fruit juice, quality, standarts, codex
