Abstract (EN)

In this research, body composition and fatty acid profiles of farm raised rainbow trout and rainbow trout which escaped from farms to nature and was fed with health food there were compared. Total crude protein, lipid ,crude ash, dry matter and fatty acid composition of plump were determined in analyses. It was found that there were big differences between body composition and fatty acid profiles of cultured rainbow trout and rainbow trouts which escaped from farms to nature. While in cultured trouts; crude protein, lipid, crude ash and moisture ratios were found respectively as 19.06%, 3.51%, 1.62% and 75.69%; in wild trouts; crude protein, lipid, crude ash and dry matter ratios were found respectively as 22.33%, 2.53%, 1.86% and 73.01%.?SFA, ?MUFA, ?PUFA, DHA and EPA quantity of cultured rainbow trouts are respectively 20.74%, 26.57%, 51.12%, 9.91% and 1.86%; however, in wild rainbow trouts it was found as 28.04%, 24.69%, 35.07%, 8.97% and 6.82%. In the result of this research; it was found that crude protein, crude ash, dry matter, ?SFA and EPA content of wild rainbow trouts were higher; but, lipid, ?MUFA, ?PUFA and DHA content were lower.
