In this study, antimicrobial effect of sour pomegranate sauce samples produced from Hicaz pomegranate with two different formulations on Stenotrophomonas maltophilia and biological activities of extracts obtained from pomegranate waste (peel, membrane and seed) were investigated. For this purpose, two groups of sour pomegranate sauce were produced with and without the addition of lemon juice by traditional methods. The antimicrobial efficacy of lemon juice alone was also evaluated. Samples were prepared in different amounts and concentrations from sour pomegranate sauce and lemon juice samples and their effects on S. maltophilia were evaluated according to disc diffusion method. Antioxidant activities and DNA protective effects of extracts obtained from pomegranate wastes under different conditions were also determined. The samples produced in this thesis were analyzed in 3 replicates. The zone diameter measurements for determination of antimicrobial activity ranged from 7.33 ± 0.58 mm to 22.83 ± 0.76 mm. When these results are considered, it is determined that all sour pomegranate sauce and lemon juice samples have antimicrobial effect on S. maltophilia correlated with the dose administered. In addition, the combination of lemon juice and sour pomegranate sauce significantly increase the antimicrobial effect. According to the test results for the determination of antioxidant activity, it was found that the samples with the highest antioxidant activity were extracts from the membrane, but all extracts contained "very good" level (> 2 mmol trolox equiv / L) antioxidants. As a result of the test performed to determine the DNA protective activity, it was determined that the extracts used had a DNA protective effect, albeit to a limited extent. According to these results, sour pomegranate sauce as a natural antimicrobial agent has potential in food industry, pharmacology and clinical microbiology. In addition, pomegranate wastes are also valuable in terms of antioxidant and DNA protection.
