Abstract (EN)

The aim of this research is to investigate the availability of quinoa, chia, teff, maş bean and buckwheat as an alternative feed raw material in ruminant feeding. For the purposes indicated, the amounts of fatty acid components and the amount of organic matter soluble in the enzyme (ESOM) in vitro were determined, as well as the crude nutrient content of this plants. Metabolic energy (ME) contents were calculated using the obtained data. Crude protein (CP) and crude lipid (CL)contents of all quinoas were found higher that graminae. The fact that the content of the ESOM is also high has shown that all quinoas can be used as an alternative to traditional grains in the early lactation period, when the energy requirements of ruminants are high, or as a source of nutrients. In particular, the high amount of linoleic acid will affect the quality of the beef meat positively, allowing the meat to enrich for the conjugated linoleic acid (CLA). The high content of all chias is rich in minerals and the high content of CP and CL indicates that the content of ME is high. A very low determination of the content of the ESOM is due to the high neutral detergent fiber (NDF) and especially the acid detergent fiber (ADF). The high CL content suggests that it can be used to prevent heat stress, especially in dairy cattle. When the fatty acid fractions are examined, the high content of linolenic acid will cause the milk fat to increase the polyunsaturated fatty acids and especially the CLA content. MENDF was found to be high because teff had a high NDF content of nitrogen-free extract (NFE) content. The results of crude nutrient analysis, fatty acid composition and ESOM values are a new alternative to grains. Maung bean suggests that it can be used as an alternative protein source because it is rich in minerals and high in HP content. It will be an important alternative to manufacturers who have been searching for alternative protein sources in recent years. The high content of NDF and hemicellulose content of the buckwheat, and the high content of the ESOM content and ME content indicate that it can be used as an alternative to wheat. In this research, it has been shown that quinoa, chia, teff, mung bean and buckwheat which fill the shelf life due to the damage of the package can be used as an alternative feed source in the nutrition of ruminant animals.
