Abstract (EN)
The purpose of this research on strategic management in the restaurant sector is to determine how businesses in the restaurant industry, one of the most significant components of the hospitality industry, implement the strategic management process. It also aims to analyze the current competitiveness of the sector using the five forces model and to explain the application of Porter's generic strategies in the restaurant sector. In line with this general objective, the primary questions addressed in the research are as follows: Is strategic management being implemented in restaurant businesses? What practices are carried out within the strategic management process in restaurant businesses? Are generic strategies being applied in restaurant businesses? The interview questions used as the data collection tool were designed considering the theoretical background of the strategic management process. The interview form includes questions aimed at obtaining demographic information about the participating managers, questions related to the business, questions about the implementation of the stages of the strategic management process, and questions to determine the application of generic strategies. The responses gathered during face-to-face interviews were recorded, evaluated within the theoretical framework, and compiled into a report.
