Investigation of some bioactive and physicochemical properties of chesnut honey from Sinop region

Abstract (EN)
In this thesis, 43 different chestnut honeys produced in Sinop province and its districts were analyzed to determine their antioxidant, antimicrobial and physiochemical properties. Dpph method was used to determine the antioxidant properties. In the measurements, honeys numbered 18, 27, 20 and 2 showed the highest antioxidant properties, respectively. in the physiochemical properties of honeys, pollen analysis and color determinations were performed. Accordingly, it was determined that 36 honey varieties contained over 90% chestnut pollen. In the color determination made according to the results of the measurement at 635nm on the pfund scale, one honey was classified as dark amber, three honey varieties were white, four honey varieties were very light amber, nine honey varieties were amber, and twenty-six honey varieties were light amber. Antimicrobial activities of honey samples were investigated for 2 Gram (+) (Staphylococcus aureus ATCC 6538 and Bacillus cereus ATCC 7064), 2 gram (-) (Escherichia coli ATCC 11293 and Pseudomonas aeuroginosa ATCC 27853) and 2 fungi (Candida krusei ATCC 6258 and Candida parapsilosis 22019) reference microorganisms. In the results of the study, no interaction was observed in all honey samples against C. parapsilosis and C. krusei fungi. according to the results of the well diffusion method, all honey samples did not show any effect against B. cereus bacteria. Against Pseudomonas aeruginosa bacteria, honey sample number 32 and honey sample number 33 showed an effect with a diameter of 7 mm and 8 mm, respectively. Against E. coli bacteria, honey number 22 was effective with a diameter of 10 mm; honeys numbered 1, 7, 11, 21, 25, 33, 39 were effective with a diameter of 8 mm; honeys numbered 19, 20, 32, 35, 42 were effective with a diameter of 7 mm. honeys numbered 4, 5, 12, 16, 17, 18, 20, 24 were not effective against S. aureus bacteria. honey number 1 was found effective with the widest diameter of 20 mm.
