Özet (EN)

In this study; Superior Seedless, Sultana and Red Globe grapes produced in Manisa Alasehir region were used in 2017. The harvested products were put into 5 different modified atmosphere packages and after 8 hours pre-cooling, the packages were taken to the cold storage. The products were stored for 45 days for Superior Seedless, 43 days for Sultana, and 72 days for Red Globe in 3±0,5°C and 90-95% relative humidity. Microbial analysis of the products was carried out before storage, the changes in gas concentrations during storage and after storage weight loss, the number of rotten berry per kg, quality criteria and microbiological analysis results were determined. Differences in the measured O2 and CO2 ratios in the MA packages have shown that the packaging materials have different gas permeabilities. Packing of grapes during storage has prevented the loss of weight which may occur in the products. After storage, the number of rotten grain per kg of the products in the packages was determined and compared with the decay rates of the polyethylene packages and antimicrobial packages used in the experiment. In addition, the quality criteria of the products; rachis appearance, berry appearance, berry color, taste were determine. The antimicrobial package used in the study and the combination of this package with ¼ SO2 generators and antimicrobial pads have been found to affect the quality criteria assessed in the trial at different levels but generally reduce product decay. As a result of the study, it was determined that packages with AM capability could be used instead of classic SO2 generator.
