Abstract (EN)
Milk is a fundamental food source that has been a cornerstone of human nutrition throughout history. (The protein, calcium, vitamins, and minerals it contains are essential for growth, development, and a healthy life). Cow's milk proteins have undergone various mutations throughout history, leading to the emergence of two distinct protein variants called A1 and A2 β-casein. (The key difference between these variants lies in the 67th amino acid position; A1 β-casein contains histidine, while A2 β-casein contains proline, similar to the original and older protein form found in the milk of other mammalian species, including human milk.) During digestion, the breakdown of A1 β-casein can lead to the release of a peptide called BCM-7 (β-casomorphin-7), which has been linked in some studies to digestive discomfort, inflammation, and other health issues. A2 β-casein does not produce the BCM-7 peptide. This thesis presents a comprehensive descriptive analysis of the international academic literature, bringing together the most comprehensive and up-to-date information available on A2 milk in Turkish. The study begins by examining the biochemical differences between A1 and A2 milk proteins in detail, and evaluates current scientific research investigating the potential effects of the BCM-7 peptide on the digestive system, immune system, cardiovascular system, and neurological development. The study not only addresses A2 milk production but also delves into the innovative and sustainable practices in this field. A2 milk-producing cow breeds, genetic selection and breeding programs, sustainable agricultural practices, animal welfare standards, and technological advancements are analyzed in detail, along with the ethical, environmental, and economic dimensions of A2 milk production. The dynamics of the A2 milk market, growth trends, consumer preferences, and marketing strategies are also a significant part of the study. Target audience analysis identifies consumer segments likely to consume A2 milk, highlighting the importance of developing marketing strategies tailored to their needs. Positioning strategies analyze different approaches that can be used to differentiate A2 milk from its competitors and create a strong brand image in the minds of consumers. The study also strategically examines the 4P marketing mix (product, price, distribution, and promotion) as the fundamental elements of A2 milk marketing. The study addresses ethical and sustainability issues in the A2 milk market, emphasizing the importance of building consumer trust and enhancing brand value. Finally, this thesis examines future growth projections, new trends, and potential research areas in the A2 milk market. A2 milk presents a significant opportunity for innovation and growth in the dairy industry, and has the potential to play a significant role in the transition to a healthier, more sustainable, and ethical food system.
